Blanched summer tomatoes are filleted by hand
and simmered extra sloly with harvest-fresh herbs,
chillies, garlic and naturally liberal quantities
of olive oil.
The result: a viscid, fruity tomato sugo.
However, it is only with the addition right at the
the end of Taggiasca olives and the small capers
from Salina, that it gets its characteristic kick.
That`s the way tomato sauce should taste!
